Huevos Rancheros

Serves: 4


  • 2 (15 oz.) cans black beans, drained and rinsed
  • 1 1/2 cups medium salsa (plus more for serving)
  • 1/2 tsp. sea salt
  • 8 corn tortillas
  • 4 eggs, fried over medium
  • Cotija cheese
  • 1 bunch cilantro, chopped
  • 1 avocado, sliced
  • Hot sauce, if desired



  1. Add black beans, salsa, and salt to Skillet over medium low heat (PL3 on Induction Burner), stir, and bring to a simmer. Continue to cook until most of the liquid has absorbed, about 5-7 minutes.
  2. In the Comal over medium heat (PL5 on Induction Burner), warm each tortilla until soft and edges begin to brown.
  3. On a plate, place 2 tortillas, add 1 cup bean mixture, and top with a fried egg. Garnish with additional salsa, cotija cheese, cilantro, avocado, and hot sauce. Repeat the process for remaining servings and serve.
