Grilled Salmon Taco with Salsa

Ingredients

  • 4 oz. salmon
  • 1/8 tsp. ancho chili powder
  • 1/8 tsp. cumin
  • 1/8 tsp. black pepper
  • ½ lime, juiced
  • 2 corn tortillas
  • 1 tbsp. cilantro, chopped (optional)

Dressing

  • 2 tbsp. avocado, sliced
  • 1 tbsp. cilantro, chopped
  • 1 tbsp. almond cream “cheese”
  • ½ lime, juiced
  • 1/8 tsp. black pepper

Salsa

  • ½ cup broccoli slaw
  • ¼ cup purple cabbage, shredded
  • ½ green onion, sliced
  • 1 tbsp. cilantro, finely chopped
  • 1 tbsp. jalapeno, sliced (optional)
  • ¼ lime, juiced
  • A pinch of sea salt
  • 1/8 tsp. black pepper

Instructions

  1. Season salmon with chili powder, cumin, pepper, and lime juice. Add salmon to preheated griddle and cook 5 minutes on each side.
  2. Add dressing ingredients to Blender and pulse until paste-like consistency is reached.
  3. Add salsa ingredients to a bowl and stir.
  4. Spread dressing on tortillas, add salmon, and top with salsa and cilantro.
    TIP: Each taco is 205 calories. If you are under your limit for the day, feel free to enjoy an additional taco.
