Choco Banana Hotcakes

Ingredients

  • 2 eggs
  • ¼ cup Greek yogurt
  • ½ cup oats
  • ½ tsp. vanilla extract
  • 1 tsp. baking powder
  • ½ banana
  • 1 tbsp. maple syrup
  • 1 tsp. olive oil
  • 1 tbsp. dark chocolate chips
  • ½ banana, sliced
  • Maple syrup (if desired)

Instructions

  1. Add first seven ingredients to blender and pulse until smooth. Transfer to a medium bowl, and let sit 5 minutes. Preheat griddle on medium heat 3 minutes. Add olive oil and reduce heat to medium-low.
  2. Measure ¼ cup of mixture per hotcake and pour onto griddle. Add 4 dark chocolate chips to each hotcake.
  3. Cook until bubbles rise on surface of hotcakes, approximately 3-4 minutes. (Hotcakes should be golden brown underneath; carefully lift edges to check.) Flip hotcakes and cook reverse side until golden brown.
  4. Serve with sliced banana, remaining chocolate chips, and maple syrup.
