Ingredients
- 2 eggs
- ¼ cup Greek yogurt
- ½ cup oats
- ½ tsp. vanilla extract
- 1 tsp. baking powder
- ½ banana
- 1 tbsp. maple syrup
- 1 tsp. olive oil
- 1 tbsp. dark chocolate chips
- ½ banana, sliced
- Maple syrup (if desired)

- Add first seven ingredients to blender and pulse until smooth. Transfer to a medium bowl, and let sit 5 minutes. Preheat griddle on medium heat 3 minutes. Add olive oil and reduce heat to medium-low.
- Measure ¼ cup of mixture per hotcake and pour onto griddle. Add 4 dark chocolate chips to each hotcake.
- Cook until bubbles rise on surface of hotcakes, approximately 3-4 minutes. (Hotcakes should be golden brown underneath; carefully lift edges to check.) Flip hotcakes and cook reverse side until golden brown.
- Serve with sliced banana, remaining chocolate chips, and maple
syrup.
