Lite Peruvian Chicken Soup

Ingredients

  • tsp. olive oil
  • ¼ cup white onion, chopped
  • ¼ cup carrots, diced
  • ½ celery stalk, finely chopped
  • ¼ cup red potatoes, diced
  • 4 oz. chicken breast, cubed
  • 2 tbsp. dry brown rice
  • ½ tbsp. Peruvian yellow hot pepper paste
  • 1 tbsp. sweet corn
  • 2 tbsp. sweet peas
  • ½ tbsp. cumin
  • A pinch of sea salt
  • 1½ cups water
  • 1 tbsp. cilantro, chopped

Cilantro Pesto

  • 1 garlic clove
  • ½ cup cilantro
  • ¼ cup green pepper, chopped

Instructions

  1. Place ingredients for cilantro pesto in blender and pulse until consistency is pastelike. Set aside.
  2. To preheated saucepan add olive oil, onion, carrots, celery, and potatoes. Sauté 3 minutes.
  3. Add chicken and rice and sauté 2 minutes more.
  4. Stir in hot pepper paste, cilantro pesto, corn, sweet peas, cumin, salt, and water. Cover and cook on medium heat 15 minutes, or until rice is done.
  5. Serve topped with cilantro.
