Egg Frittatas

Serves: 5 cups


  • 1 tbsp. olive oil
  • 1/4 onion, diced
  • 1 red bell pepper, seeds removed and diced
  • 2 jalapeño pepper, seeds removed and diced
  • 6 eggs
  • 1 oz. heavy cream or milk
  • 1 tsp. sea salt
  • 1 tsp. black pepper
  • 1.5 oz. Mexican cheese, crumbled



  1. Preheat Skillet 3 minutes on medium heat (PL5 on Induction Burner). Add olive oil, onion, bell pepper, jalapeño, sauté 5 minutes, and set aside.
  2. Crack eggs into a large bowl. Add heavy cream or milk, salt, peppers, onion, and jalapeño.
  3. Connect 2-piece Whisk Attachment to Blender Motor and turn clockwise until it locks into position, using locked and unlocked icons as a guide, and plug into outlet (Whisk features a connector attachment required for use with Blender Motor and will not work without it). Place Whisk Attachment into egg mixture in bowl and turn appliance on by pressing and holding speed I button, and adjust as necessary with speed control dial. Whisk ingredients to desired consistency using a clockwise direction for up to 2 minutes at a time to prevent motor from overheating.
  4. Preheat Air Fryer 3 minutes at 360°F (press Manual button once followed by Power button). Fill metal cups 2/3 high with mixture, top each with 1 tsp. cheese, and place in Fry Basket. Slide Pan with Fry Basket into Air Fryer and set temperature to 320°F and timer for 10 minutes.
  5. When cooking cycle is complete, pull Pan with Fry Basket out of Air Fryer. Repeat the process with remaining mixture. Remove frittatas from metal cups and serve with choice of condiments and/or toppings.
