Vegetarian Tamale Dough

Yields: 40 - 45 tamales


  • 2 cups solid vegetable shortening
  • 2 tbsp. kosher salt
  • 4 tsp. baking powder
  • 7 cups masa harina for tamales
  • 4 ½ cups warm water (more as needed)



  1. Add shortening, salt, and baking powder to Mixing Bowl of Stand Mixer. Connect Wire Whip attachment and beat on medium speed until fluffy, about 3 minutes.
  2. Turn off Stand Mixer, connect Dough Hook attachment, reduce speed to low, and carefully add masa harina in small increments. When all masa harina has been added, increase to high speed and mix 3 minutes more.
  3. Turn off Stand Mixer and connect Flat Beater attachment. Add 1 cup of warm water, set on high speed, and mix 1 minute. Continue adding water 1 cup at a time. Mix on high speed in between adding water in 1-minute increments. Repeat until mixture is smooth and spreadable.
