Creamy Tomato Basil Pasta
Ingredients
- ½ tbsp. olive oil
- 1 cup white onion, diced
- 2 garlic cloves, diced
- 1 lb. tomatoes
- 12 oz. penne pasta
- 2 cups vegetable broth
- 1 tsp. sea salt
- 2 tsp. oregano
- 3 cups spinach
- ¼ cup Greek yogurt
- 1 cup fresh basil, chopped
- ¼ cup parmesan cheese

Instructions
- Preheat Casserole at medium-low heat for 3 minutes (PL3 on Induction Burner).
- Add olive oil, onion, garlic, and sauté 3 minutes.
- Add tomatoes to Blender, blend into paste, add to Casserole, and stir.
- Add pasta, broth, salt, and oregano. Stir, cover, and cook 10 minutes.
- Uncover and add 2 cups spinach. Stir well, cover, and cook 5 minutes more.
- Uncover and stir. Add remaining spinach, yogurt, basil, and cheese. Stir well and serve.
