Creamy Sweet Potato & Cauliflower Soup

Serves: 4  

Ingredients

  • 2 sweet potatoes, chopped
  • ½ cauliflower head, chopped
  • 1 garlic clove, chopped
  • 1 shallot, chopped
  • 1 tbsp. olive oil
  • 1 tsp. curry
  • ¼ tsp. mustard seed
  • ½ tsp. salt
  • 1 cup vegetable consommé
  • 1 cup coconut milk

Serve with:

  • Carrot ribbons (optional for garnish)
  • Cilantro, chopped (to taste)
  • Chives, chopped (to taste)
  • 1 tsp. olive oil (optional)

Instructions

  1. Add sweet potatoes, cauliflower, garlic, and shallot to baking dish, coat with olive oil, and roast in oven for 30 minutes at 400°F.
  2. Transfer to the Blender. Add curry, mustard seed, salt, consommé, and coconut milk. Press the Soup mode button to automatically blend for 7 minutes.
  3. Prepare four bowls and top with carrots, cilantro, chives, and olive oil.

Note: Roasting vegetables intensifies the flavors, highlights the sweet potato, and softens the garlic.
