Clean, peel and slice the beets with Mandolin to a medium-thin thickness.
Cut the onion down the center in eighths, stopping about an inch from the bottom so it does not fall apart.
Add 2 cups of water to the Vida Sana 12” skillet with rack. Place the onion in the center of the rack, and distribute the slices of beets around the onion.
Cover with the lid and turn valve to the Steam-Whistle position. Cook on medium-high heat (PL7 in PH Induction).
When the Whistle sounds, turn the valve to the Steam-Seal™ position, reduce heat to medium heat (PL5 in PH Induction) and cook for 5 minutes.
When finished cooking, proceed to serve the salad in layers. First the beet wheels, then the petals of the onion, cherry tomatoes, salt and pepper to taste, and finish with cilantro and goat cheese.
Right before you are ready to eat, add the red wine vinegar and virgin olive oil to taste.
