Potatoes in Red Pepper Sauce

Prep Time: 5 min | Cook Time: 10 min | Serves: 4


  • 1 cup water
  • 3 cups potatoes, diced
  • 1 cup onion, quartered
  • 2 cloves garlic
  • ½ tomato, halved
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ⅛ tsp. oregano
  • ½ tsp. red paprika
  • Salt and pepper to taste
  • Fresh cilantro
  • 2 tbsp. capers



Place rack in Skillet and add 1 cup of water. Place on high heat for about 5 minutes.

Place potatoes, onion, garlic and tomato on rack. Sprinkle with salt.

Cover with the lid and turn valve to the Steam Whistle position.

When the Whistle sounds, turn the valve to the Steam-Seal™ position. Turn off the heat and let it cook for 5 minutes covered.

Transfer onion, garlic and tomato to Blender and add seasonings.

Blend until smooth. Taste and adjust with salt and pepper.

Transfer potatoes to a serving bowl and cover with the sauce from Blender. Garnish with cilantro and capers.
