Vida Sana Lemon Garlic Chicken with Vegetables

Serves: 4


  • 1/3 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice (and zest)
  • 6 garlic cloves, minced
  • 1/2 cup fresh oregano
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup chicken broth
  • 4 (6-ounce) boneless, skinless chicken thighs or breasts
  • 4 summer squash, thinly sliced into coins
  • 1 stalk of leeks, julienned
  • 1 large shallot, thinly sliced
  • 8 pitted green olives, cut in half
  • 8 cherry tomatoes, cut in half

In a large bowl, whisk together the olive oil, lemon juice and zest, minced garlic, oregano, 1 tsp. kosher salt, and ¼ tsp. freshly ground black pepper. Add the chicken and marinate for up to 2 hours. (Do not exceed 2 hours because the acidic marinade will alter the chicken’s texture.) Using the Steam-Seal™ setting, sear the chicken breast, cooking 1 - 2 minutes per side. Remove chicken from Skillet and set aside. Let the skillet cool and then line it with the summer squash and/or zucchini. Add shallot rings and then leeks. Sprinkle the vegetables with salt and pepper. Place chicken on top of the vegetables and spoon some marinade on top. Add olives and cherry tomatoes. Pour in broth. Cover Skillet and turn valve to Steam-Seal™. Over medium-high heat, cook 15-20 minutes, or until the chicken thighs register an internal cooking temperature of 165°F. (Use a meat thermometer.) To serve, arrange chicken on top of the tomatoes, olives and vegetables. Top with the sauce from the Skillet. Garnish with arugula and red onions.
