Chicken and Chorizo Fajitas

Serves: 6 | Time: 30 mins.


  • 3 boneless chicken breasts
  • 4 limes, juiced
  • ½ cup Worcestershire sauce
  • ½ tsp. smoked paprika
  • 2 tsp. sea salt
  • 1 tsp. ground black pepper
  • 1 medium red onion, sliced
  • 3 bell peppers, red, yellow and green, sliced
  • 1 cup shredded Mexican chorizo



Preheat Skillet over medium-high heat. Add a few droplets of water to the Skillet; when the droplets bead and dance across the surface, add chicken breast and reduce heat to medium. Sear one side for 4 minutes, use tongs to turn. If there is sticking, allow food to cook 1-2 minutes longer. Cover with lid, turn valve to the Steam-Seal™ position and reduce heat to medium low. Cook for 5-8 minutes.

Remove chicken and transfer to cutting board. Slice chicken thinly and toss into a bowl, season with lime juice, Worcestershire sauce, paprika, salt and black pepper. Set aside. Clean your Vida Sana Skillet, preheat again over medium-high heat. Do the water test to see if the pan is ready for food. Add onion, bell peppers and chorizo. Sauté for 5 minutes. Toss seasoned chicken into Skillet and stir well. Cover with lid and turn valve to Steam Whistle position, reduce heat to medium. Once whistle sounds, turn valve to Steam-Seal™ position and cook for 7 minutes. Serve over warm tortillas and a side of black beans.
