  • 1 lb. chicken, diced
  • 2 cups onion, diced
  • 4 garlic cloves
  • 2 cups Chicken Consommé
  • 1 cup green peppers, chopped
  • 1 cup of carrots, diced
  • 1 cup chayotes, diced
  • 1 ½ cups cilantro
  • Salt, pepper and cumin to taste
  • ½ cup raw quinoa
  • ½ cup green peas
  • 1 bay leaf



  1. Season the chicken with salt and pepper.
  2. Preheat the Vida Sana 14” Skillet on medium heat.
  3. Once it passes the water test, add the chicken and sear on both sides.
  4. Transfer the chicken to a dish and cover to keep warm.
  5. Add the onion, garlic and ½ cup of the chicken consommé, keeping heat on medium.
  6. Saute for 3 minutes. Add the peppers, carrots, chayote, cilantro, quinoa, and the rest of the chicken consommé and salt and pepper to taste.
  7. Cover with the lid, turn the valve to the Steam-Seal position and reduce the heat to low.
  8. Cook for 15 minutes, stirring every few minutes.
  9. Uncover, add the chicken and the peas, stir well and cook for 10 minutes.
  10. Divide into four equal portions.
