Salmon with Spicy Cucumber Salsa

Serves: 4 | Prep: 10 mins | Total: 20-25 mins


  • 4 salmon filets, with skin
  • ½ cup fresh lemon juice

Salsa Ingredients

  • 2 tbsp. fresh lime juice
  • 2 tbsp. honey
  • 1 tbsp. oil
  • 2 cucumbers, thinly chopped
  • 2 scallions, thinly sliced
  • 1 cup fresh pineapple, finely diced
  • 1 cup fresh mango, finely diced
  • 2 jalapeño chili, ribs and seeds removed and minced
  • ¼ cup fresh basil leaves, chopped
  • ¼ cup rosemary leaves, chopped
  • Salt and pepper to taste



For Salsa: Whisk the lime juice, honey and oil in a bowl. Add remaining salsa ingredients. Toss gently to combine. Add salt and pepper to taste. Set aside.

For Fish: Season on skinless side with salt and pepper.

Preheat Skillet on medium-high heat. Sprinkle water droplets into Skillet; when the droplets bead and dance across the surface, add salmon, skin side down and pour lemon juice over the fish. Lower heat to medium low. Cover with lid and turn valve to the Steam-Seal™ position, and cook for 10-12 minutes. Serve salmon topped with salsa.
