Quick Spanish Rice

Serves: 6-8


  • 1 tbsp. Princess House® Pure Grapeseed Oil
  • 1 small onion, diced
  • 1 small red pepper, diced
  • 1 cup long-grain white rice
  • 8 oz. mild or medium salsa
  • 1 cup water
  • 1 tsp. salt
  • ½ tsp. black pepper



  1. Heat the oil in Pressure Cooker over medium-high heat with lid off and sauté the onion and red pepper until softened.
  2. Add rice and sauté for 2 minutes until rice starts to become opaque. Add salsa, water, salt, and pepper.
  3. Close the lid, bring to pressure at high heat, then lower heat and cook at pressure for 5 minutes. Use natural release method to expel steam.
