Rotisserie Chicken
Ingredients
- Chicken Rub: (can be substituted with your favorite chicken rub)
- 1 tsp. paprika
- 1 tsp. dried thyme
- ½ tsp. sea salt
- ¼ tsp. freshly ground black pepper
- 1 tbsp. Princess House® Pure Grapeseed Oil
- 4 lbs. whole chicken
- 1½ cups chicken broth
- 1 onion, quartered
- 2 tbsp. lemon juice
- 6 cloves garlic, peeled

Instructions

Combine paprika, thyme, salt, and pepper in a small bowl. Rub seasoning over outside of chicken.
- Add oil to the Pressure Cooker and brown chicken, breast side down; cook for 7 minutes with the lid off.
- Flip the chicken, breast side up; add broth, onion, lemon juice and garlic cloves. Close the lid, bring to pressure at high heat, then lower heat and cook at pressure for 25 minutes.
- Use natural release method to expel steam. Remove from Pressure Cooker and let stand for 5 minutes before carving.
