Chef Carlos’s Tropical BBQ Sauce Recipe

Serves: 6


  • 1 oz. Butter
  • 1 Green Mangoes, cubed
  • 2 Cups Guava concentrate (or 2 cans juice)
  • 2 Cups of original flavor BBQ sauce
  • 1 Rack Pork Baby Back Ribs, prepared


  • ½ cup minced fresh cilantro
  • ½ cup thinly sliced green onion



In Saucepan over low-medium heat, sauté the mango in butter until golden, add the guava concentrate and simmer to reduce by half. Cool, then blend. Return the fruit mixture to saucepan, add BBQ sauce and simmer on low-medium heat until sauce has thickened, about 10-15 minutes. Baste prepared ribs with warm sauce and grill.
