Tres Leches Cake

Serves: 8

  • 2 tbsp. butter, room temperature
  • 1 cup all-purpose flour
  • 1 ½ tsp. baking powder
  • ¼ tsp. salt
  • 5 large eggs, separated
  • 1 cup sugar, divided
  • 1 tsp. vanilla extract
  • 1/3 cup whole milk
  • 1 can (14 oz.) sweetened condensed milk
  • 1 can (12 oz.) evaporated milk
  • ¼ cup heavy cream

  • 1 ¾ cups heavy cream
  • 1 tsp. vanilla extract
  • 2 ½ tbsp. sugar

  • 5 strawberries, sliced

  1. Preheat oven to 350°F and grease bottom and sides of Casserole with butter.
  2. In a large bowl, combine flour, baking powder, and salt. Mix and set aside.
  3. In two large bowls, separate egg yolks and egg whites.
  4. In bowl with egg yolks, add ¾ cup of sugar. Connect Blender Attachment directly to Blender Motor and turn clockwise until it locks into position, using locked and unlocked icons as a guide, and plug into outlet. Place Blender Attachment into bowl and turn appliance on by pressing and holding speed I button, and adjust as necessary with speed control dial. Blend ingredients until mixture becomes pale yellow in color, using a gentle up-and-down motion for up to 1 minute at a time to prevent motor from overheating. Add vanilla extract and whole milk and blend. For best results, do not place Blender attachment at an angle. Pour egg mixture into flour mixture and combine to make batter.
  5. Whip egg whites 1 minute at high speed using Whisk Attachment. Add remaining ¼ cup sugar and continue whisking on high 2 minutes more. Egg whites should be fluffy.
  6. Add egg whites to batter and mix with a hand whisk to combine. Pour batter into Casserole and bake 35 minutes. Check for doneness by inserting a fork into cake. If fork comes out clean, cake is ready. Let cool 15 minutes.
  7. In a large bowl, combine condensed milk, evaporated milk, and heavy cream. Whip 1 minute at medium speed using Whisk Attachment.
  8. Once cake has cooled, poke a generous amount of holes in it with a fork or toothpick. Pour milk mixture over cake and let sit 30 minutes.
  9. In Beaker, add frosting ingredients and whip 1 minute at high speed using Whisk Attachment.
  10. Spread frosting over cake, add strawberries around the edge, and serve.
